Ayam Bumbu Kecap - Soya Chicken

Chicken wings are the favorite part of the chicken in my household and with this recipe you can use any part of the chicken that you like.  Grind 3 cloves of garlic, 4 shallots, 2 candle nuts, and a heaping teaspoon of coriander seeds into a fine paste.  Then saute them on medium heat with a little vegetable oil and add 2cm chunk of peeled galangal root and 2 bay leaves.  Once it slightly browns and becomes aromatic add the chicken pieces and season with salt and white pepper.  When the chicken is half done add sweet soya sauce and a cup of water until it is dark amber in color. Let it braise on low heat until the chicken is cooked and the sauce has thickened.  If it is not fully cooked yet and the sauce is drying out, add more water.  Once this is ready bake in the oven on medium heat for 15 minutes and eat over hot rice and add some of the sauce to the rice.  Even better, if you have an outdoor grill - skip the baking process and barbeque over the grill - brushing each piece on both sides with the sauce.  It's heaven...
